Here are the two lager yeast from Angel yeast, that is BF16 and BF27. According to the description, the two strains are both natural strains and GMO free, the optimal fermentation temperature ranges from 10℃ to 15℃, and both can be used for brewing pilsner, American lagers, and other Bottom-fermenting beers.
They also have similar typical analysis, such as:
Dry weight: ≥93%
Living yeast cell: ≥4. 0*109 cfu/g
Wild yeast:≤1. 0*103 cfu /g
Total bacteria: ≤5. 0*103 cfu /g
Lactobacillus: ≤1. 0*103 cfu /g
Pathogenic micro-organisms: none
Both should be stored in low temperature (≤10℃) and dry place and rehydration is needed before brewing.
So how about the difference between the two lager stains?
We prepared an experiment to find out the answers on attenuation, fermentation rate, utilization of sugar, finished beer profile, and sensory evaluation.
We made a wort of which the O.G. is 1. 070, and inoculated 1. 5g/L dry beer yeast, respectively. After that, the wort were kept 12. 2°C for 48h, 15. 6°C for 144h, and then 0°C for 48h.
(1) Attenuation
At the end of fermentation, the F.G. of beer BF16 was 1. 011, while that of beer BF27 was 1. 010. It suggested that BF27 possessed a high attenuation, which was about 85. 7%, and the attenuation of BF16 is 84. 2%.
(2)Fermentation rate
The two beers could be finished within 20 days and owned a similar brewing process. For beer BF27, the fermentation rate is much faster during primary fermentation and much slower at secondary fermentation.
(3)Utilization of sugar
Both BF16 and BF27 could not make use of dextrin and the utilization rate of simple sugars, such as Glucose, Fructose, and Maltose, both was almost 100% as expected. There were several differences on the utilization of Malt trisaccharide (DP3) as below. BF27 could make use more DP3 than BF16 about 2. 3% higher.
(4)Finished beer profile
Beer BF16 had less total esters while had more total fusels and total volatiles than BF27.
Beer BF16 tasted moderate fruity aroma characterized as banana and apple, and also possessed balanced mouthfeel, slight sourness, with no lingering astringency.
While beer BF27 had a neutral fermentation with minimal yeast related aroma allowing malt and hop aroma to be perceived, and also possessed slight sweet fruit aroma characterized as banana, apple, pear and balanced mouthfeel, as well.
(5) Summarize
BF16 is an excellent lager yeast to help produce lagers of the finest quality. Help to taste refreshing and present a clear and bright body.
BF27 is an excellent lager yeast to help produce lagers of fruity and floral aromas. Give a high drinkable beer, and present a clear and balanced body.
